My homemade Chili

Chili is a recent discovery and I have become obsessed with making it and perfecting the recipe. This is what I came up with

  1. Brown and break up the mince in a saucepan

  2. In a big pot cook off the onion until it is soft and translucent, then add the garlic

  3. Add the bacon and chorizo, cook for 5 mins

  4. Add the peppers and the spices, stir so that everything gets a good coating, and cook for another 5 mins

  5. Add the mince to the pot and mix together

  6. Add the tomatoes, tomato puree, can of Guinness, crumble in the stock cube; and give a good stir

  7. Season with salt and pepper, and cook until the sauce thickens (usually 45 mins to an hour for me)

  8. Add the beans and cook for another 10 mins

  9. Remove from the heat, let sit for 10 mins before serving
